These Cheesy Summer Squash Zucchini Bites are easy, super flavorful and a great meal prep idea for a weekday dinner night. They are loaded with summer squash, garlic, mushrooms, and two types of cheese - blue cheese and parmesan cheese. All this yumminess is served with a creamy avocado yogurt dressing for a mind-blowing culinary experience!
1summer squash gray zucchini, medium, grated and drained
1egg
⅓cupbreadcrumbs
¼cupParmesan cheese, or semi-mild cheese, grated
¼cupblue cheese, grated
½half onion, small, diced
1garlic clove, minced
1teaspoondried oregano
Salt and pepper to taste
Avocado Yogurt Dressing
½cupGreek yogurt or plant-based yogurt
1avocado, mashed
½teaspoonsalt
1tablespooncilantro, or parsley if don’t like cilantro
¼lime juice
INSTRUCTIONS
Preheat oven to 400F. Line baking sheet with parchment paper. Brush the surface lightly with olive oil.
Wash and peel zucchini. Finely grate it into a bowl. Then transfer and wrap it into a thin kitchen towel placed over a strainer and a bowl in the bottom. (See images)
Twist the towel to wring out the moisture.
Cut the mushrooms and onion into small pieces.
Mince or crush the garlic using a garlic cutter.
In a large bowl, combine zucchini, cheeses, breadcrumbs, mushrooms, garlic, onion, oregano, salt, and pepper and mix well.
Shape the mixture into small one tablespoon-size balls using your hands, and transfer to the baking sheet.
Bake for 20-25 minutes or until golden brown from the outside.
Garnish with parsley and serve with avocado yogurt on the side.
Avocado Yogurt Dressing
Mash one avocado until creamy.
In a small bowl simply mix avocado, minced garlic, yogurt, one tablespoon chopped cilantro (use parsley if not coriander lover). Taste for salt.
NOTES
Store. In the fridge up to a week.Variations. Feel free to swap this gray zucchini to any other squash type, all of them will taste delicious. You can even mix in some sweet potato, regular potato if you’d like. Dressing. Another option is to serve these bites with spicy salsa or even both, salsa and avocado yogurt.
