  • Are you baking?
    • If you are baking then you need the apple cider vinegar to elicit a chemical reaction to help the baked goods rise.  If that’s the case then choosing a mild-flavored vinegar may be best, opt for white wine vinegar, red wine vinegar, or distilled vinegar.
  • Are you using the vinegar in a salad dressing?
    • Apple cider vinegar adds a sweet and tart taste to salad dressing so apple cider, red wine vinegar, balsamic vinegar, and champagne vinegar would be good options.
  • Are you adding apple cider vinegar to a marinade?
    • Adding apple cider to meat or chicken marinades helps tenderize the meat as well as adding a touch of a zing or a tart flavor. 
    • If this is what you need to find a substitute for then any of the listed options will help you achieve these results. Though plain distilled white vinegar would probably not be the best choice in terms of adding a nice flavorful zing it will help with tenderizing the meat.

How Long Does Guacamole Last?

SHORT ANSWER: Properly stored refrigerated guacamole will last for 2-3 days and is still edible even if slightly brown.

Why Does Guacamole Turn Brown?

Once guacamole has been made, an enzyme in the flesh of the avocado that is exposed to oxygen reacts and turns that layer a brownish color.

This process is known as oxidation and is exactly the same reaction occurring in apple slices, bananas exposed to oxygen. 

Is It OK to Eat Avocado That Has Turned Brown?

Brown guacamole may not look appealing, but it's still safe to eat. If your guacamole is refrigerated and within three days old, it is still safe to eat.

The same rule applies to brown avocados. While different methods listed below can slow down browning, they won't stop it entirely.

How to Tell If Guacamole Is Bad

Bad guacamole - freshly made guacamole doesn't like warmer temperatures and is prone to quickly developing mold and bacteria inside. In addition, if not handled properly it can lead to foodborne illnesses.

  • An easy way to tell that avocados are gone bad is when they are too soft to touch. It is a sure sign that the avocado you are holding is overripe and potentially bad inside. 
  • Once opening the avocado, it’ll soon become clear that avocado is no longer suitable for consumption if the flesh is mostly discolored, if there is mold present, or if the avocado has a rancid, sour or weird bad smell.
  • What happens if you eat bad guacamole? Can old guacamole make you sick? It may be a sign of mold present and is unhealthy for consumption.

Different Storage Methods For Guacamole

1. Guacamole with water (my favorite method!)

To limit the discoloring to the max, place fresh guacamole into a bowl or airtight container, add lime juice on top of the guacamole,and pour a visible layer of water (room temperature) on top. Just about 1 inch or 2.

Finish with a layer of plastic wrap over the top so that there is no contact with any air in the storage container or bowl. Keep refrigerated. This way your guacamole will remain green (a very few brown spots may still occur but is mostly rare compared to other methods) for longer.

Be sure to make a taste test before digging in. No more brown guacamole!

2. Guacamole with lime juice

Lime or lemon juice, rich in ascorbic acid, fights the browning process. This method is great but will work best with smaller portions in shallow containers. The only issue here is that your guac may taste too tart and the ratios may be off. However, you can remove the top layer before serving and this should help drastically with the flavor.

To store take an airtight container and rub it generously with lime and place the guacamole inside. Drizzle more lime juice on top of the guac, which will help to fight brown spots occuring. Refrigerate.

3. Guacamole in an airtight container

Even when stored in an airtight container, guacamole is exposed to oxygen, resulting in the top layer turning brown within a day. You'll see a substantial puddle of brown liquid on top. To minimize oxygen exposure, I recommend using a reusable silicone freezer bag or a Ziploc bag.

4. Guacamole in an airtight container with plastic wrap

To shield the chunky mashed avocado, use at least two layers of plastic wrap, as regular cling wrap can be somewhat porous. Transfer to an airtight container. This will indeed result in less browning compared to simply storing guacamole in an airtight container, however, you'll see some notable degree of discoloration.

Which Approach To Choose

Guacamole stored with water is the best to prevent browning. Storing guacamole with lime juice is second best and gives a slightly brighter top compared to any other methods, however, the flavor avo-lime ratios may be off. Water is more cost-effective, making it my preferred choice.

The Best Way to Store Guacamole In The Fridge

Keep homemade or store-bought guacamole fresh in the fridge for up to three days while preserving its vibrant green color.

  • Pack the guacamole tightly into an airtight container, eliminating air pockets by using the back of a spoon.
  • Smooth the guacamole's surface with the spoon to ensure even coverage and less water.
  • Gently pour a one-inch deep layer of water over the guacamole, being careful not to disturb its smooth surface.
  • Seal the container and refrigerate for up to three days.
  • When ready to enjoy, pour off the water layer, and gently stir the guacamole with a fork to incorporate any remaining moisture.

How To Freeze Guacamole

In case you have some leftover guacamole you can freeze it. However I don't recommend this option due to the loss of nutrients and possibly a change of texture after thawing.

  • Guacamole can be stored in an airtight container, Ziploc bag, or even in ice cube trays, for up to 3-4 months. 
  • Make sure to squeeze all excess air from the Ziploc or freezer bags used to store the guacamole.
  • A light drizzle of olive oil on top prevents ice crystals from forming, which can lead to overly watery guacamole.
  • Proceed to secure the container with a sealable lid or wrap the ice cube tray with additional plastic wrap. 

How Long Avocados Last Unrefrigerated

An unripe avocado will last for about 3-5 days before maturing at which point it will last for another few days but is best stored in the refrigerator at the time of ripening. 

If your avocados are already ripe then they will only last at room temperature for 2-3 days before use.

How To Thaw Guacamole

Frozen guacamole should be thawed in the refrigerator prior to use but if you are in a rush, simply place the sealed Ziploc bag, container, or ice cube tray into a bowl of cold water for about 30-40 minutes. 

For food safety reasons, do not allow the frozen guacamole to thaw at room temperature without the aid of a bowl of cold water. 

Best Tips To Extend The Shelf Life Of Guacamole

To avoid foodborne illnesses and to ensure your guacamole remains safe and fresh follow these simple steps:

  • Wash avocados before slicing to prevent bacterial contamination from the skin.
  • Keep your hands clean while handling food.
  • Avoid cross-contamination by separating guacamole ingredients from raw meat or unwashed vegetables.
  • Use clean containers for storage.
  • Refrigerate promptly, as guacamole can spoil and promote the growth of harmful microbes when left at room temperature.
  • When refrigerating your guacamole, it is best to make a simple avocado mash with some lime salt and black pepper. If you add mix-ins like sour cream, tomatoes, onions,  your guacamole will have a significantly shorter shelf life.

What Types Of Avocado Is Best For Guacamole

While you can make guacamole with any type of avocado, most will agree that ripe avocados and particularly Hass avocado variety is the best for making guacamole since it has an intense flavor and the flesh is ultra-creamy. Hass avocado is one of the most widely grown avocado varieties and has great health benefits.

If you don’t have Hass avocado available, another way to ensure that you get the best avocados for your homemade guacamole is to carry out a few simple inspections:

  • When shopping for avocados make sure you choose them with stems attached. Because if there is no stem anymore and the avocado seems soft, then it's more likely that your avocado will have brown spots inside. These are the two easiest first signs of spoilage that you can spot right away.
  • Press gently on the outer skin of an avocado. The flesh of a ripe avocado will give way slightly. If it doesn’t then the avocado is unripe. If it’s too soft then it’s overripe. 
  • A ripe avocado will have a darker skin color while an unripe avocado will be a bright green. The skin color should be predominantly dark green with a little black. 
  • Check the integrity of the avocado skin. If an avocado appears to be split or have any lumps, or odd markings then it’s best to skip past and select another avocado.
  • Avoid too soft avocados, as this means they are overripe and the browning process has already started.

Does keeping the pit in an avocado keep it fresh?

Once you open the avocado, the browning process will start as the flesh is exposed to oxygen.
If you're not planning to consume the entire avocado right away, then one way to keep it fresh for longer is to leave the avocado pit inside. The flesh underneath the pit will remain fresh for longer with only a few black spots.

For best results, drizzle some lime juice on top and tightly wrap the remaining avocado half in plastic wrap and refrigerate.

What Do You Do With Guacamole

How and What to serve with guacamole:

  • On toast - egg or salmon avocado toast with creamy guacamole are my favorite! (or with Eggs Benedict or Eggs Royale
  • Sandwiches, burgers
  • Add sour cream to your guacamole and you have a perfect avocado dip for your nachos. Don't forget the Nacho cheese sauce!
  • Salad dressings
  • Loaded potatoes - especially with sweet potatoes!

Can You Eat Brown Guacamole? Guacamole food poisoning? Fresh avocado flesh has a vibrant green hue and is somewhat soft to touch. These are considered perfectly ripe and ready to eat right away. However, avocados with some brown spots inside are okay to eat if overall the fruit looks fine, without a hint of a smell of fermentation. If you feel uncomfortable, simply cut the black spots out and eat. Brown spots may occur to bruising for example and don’t necessarily indicate spoilage.
Always use your best judgment and if the fruit flesh has a visible color change: it has become darker in color, mushy, and with an off odor, throw it away as it highly likely has some mold present.

Make sure that your sweet potatoes have been boiled or baked long enough in preparation for making sweet potato casserole. The cooked potatoes should be fork-tender and easy to mash. 

3. Overmixing Ingredients

While you want a smooth consistency, overmixing the mashed potatoes with the rest of the ingredients can undo the thickening properties of the mashed sweet potato. Gently fold the mashed sweet potatoes into the rest of the casserole ingredients to combine. A rubber spatula is perfect for this. 

4. Lack of Eggs

Eggs act as a binding agent and create a structure for a sweet potato casserole. Without enough eggs, the casserole will remain loose and watery. A good ratio is 2-3 large eggs per 3-4 cups of mashed sweet potato. 

5. Excessive Marshmallow Topping

The moisture from too much marshmallow topping can seep into the sweet potato filling and affect the texture. Follow the recipe and don’t get too heavy-handed with this sweet topping. 

6. Not Using The Correct Pan

Don’t create a thin sweet potato casserole by spreading the filling in an oversized pan or baking dish. A 9 or 8-inch dish (oval, round, or rectangular) is ideal.

I’ve touched on this slightly above, but measuring all of the ingredients is key to the perfect sweet potato casserole consistency. Always use measuring cups, measuring spoons, and a food scale when baking.

Always drain the cooked sweet potatoes in a colander for about 15 minutes before mashing them and adding them to other casserole ingredients. The potatoes will naturally release liquid while they cook and you don’t want this excess liquid in your casserole. 

10. Using Other Potatoes

Stick to using sweet potatoes when following a recipe for sweet potato casserole and don’t substitute with other varieties, such as Russet potatoes which lack the starch, sugar, and moisture content required for this particular dish. 

True sweet potatoes have orange flesh and brown skin. They are sometimes referred to as ‘yams’ in grocery stores although this isn’t technically correct. 

11. Incorrect Order of Ingredients

Eggs should be added after the mashed sweet potato is combined with sugar, milk, butter, and spices. This order helps to create a better structure in the casserole. You also want to avoid mixing liquids like milk or cream with the mashed potato first as they can actually wash some of the starch away. 

12. Incorrect Storage And Reheating

Incorrect storage and multiple reheating of leftovers can impact the texture of the sweet potato casserole. Only reheat the right amount of portions required at a time.

Oats come in various forms depending on the processes used to prepare them for consumption and specific uses. Here is a list of the different types of oats available:

Rolled Oats

Rolled oats are made from whole oat groats that have been dehusked, steamed, rolled flat, and then toasted. They are considered to be lightly processed. 

Steel-Cut Oats

Steel cut oats are made from whole oats that are chopped into 2-3 small pieces. They can be sold as is or further processed to be flattened. 

Whole-Grain Oats

Whole-grain oats are known as oat groats. They are simply grain kernels that have been cleaned with their inedible hulls removed. 

Instant Oats

I highly recommend purchasing from brands that specifically market their oats as “certified gluten-free”. While these brands will add a premium cost to their products, they do so because they have to ensure strict processes within their manufacturing and storage facilities to ensure zero cross-contamination. These companies are regulated by law and can be sued for any infringements.

How To Tell Which Brands Of Oats Are Gluten-Free?

Brands specifically marketing to gluten-free buyers will add this to their packaging. That said, it’s best to stick with those advertising “certified gluten-free” for complete peace of mind!

Always do your research and don’t blindly rely on blog post roundups. Reputable brands will provide their information on their websites for you to check, and if they don’t, skip them!

Cross-Contamination-What You Need To Know

Gluten contamination can occur during the processing of oats as well as the packaging and storing of the oats. Here are three main ways in which cross-contamination can occur, making oats potentially unsafe to consume for those with food allergies.

Storage And Manufacturing

Some facilities and warehouses that store regular oats also store other types of foods (including wheat products) and ingredients that contain gluten. When it comes to cleaning pumpkin seeds, managing the mess can often be a tricky task. However, fear not! Here's a simple step-by-step guide to simplify the process, ensuring a smoother experience.

Instructions

Cut the pumpkin. Start by cutting open the pumpkin. If you're going for jack-o-lanterns, carve a circle around the stem - big enough to reach inside but not too big to mess up your design. But if you're not decorating for Halloween, just slice it straight in half for easy seed access.

Grab a sharp kitchen knife, a pumpkin carving blade, or even a fine-toothed hand saw. But be careful, pumpkins are slippery, and it's easy to lose control of the tool. Safety comes first!

Scoop out the seeds with a large metal spoon or if you have a pumpkin carving kit use those tools.

Separate and rinse the seeds. Remove the seeds with a metal spoon. Place the seeds in a colander or fine mesh strainer and thoroughly rinse them under cold running water. Rub the seeds between your fingers to aid in removing any stringy bits of pulp or flesh.

  • Optional soaking. Some prefer soaking the seeds in a bowl of water for a few minutes to facilitate the loosening of stubborn pumpkin debris. Stir the seeds in the water and then drain them before proceeding further.
  • Optional: Boil pumpkin seeds. An optional step is to boil the seeds in salt water before roasting, ideal for savory, salt-infused pumpkin seeds. For boiling, maintain a ratio of 2 cups of water to 1 tablespoon of salt for every ½ cup of seeds. Boil the seeds for approximately 10 minutes, adding up to 2 tablespoons of salt for a stronger salty taste. After boiling, strain the seeds without rinsing them, preparing them perfectly for roasting.

Dry pumpkin seeds. Following the rinsing process, lay the seeds on a clean kitchen towel or paper towel. Pat them dry to eliminate the excess moisture, ensuring they are reasonably dry before proceeding to cook or dry them further for storage.

  • Optionally, opt for oven drying for a quicker outcome: To expedite the drying process, preheat the oven to a low temperature (around 150-200°F or 65-95°C). Spread the seeds evenly on a baking sheet and place them in the oven for approximately 30-45 minutes. Remember to stir occasionally until the seeds become dry and crispy, taking care to prevent burning.

I tested both boiling and not boiling pumpkin seeds before roasting, but honestly, I didn't notice any taste difference between the two methods. When roasting a larger quantity, it's essential to do it in batches for even roasting.

Season and roast pumpkin seeds. All you need is some butter or olive oil and seasonings. For savory pumpkin seeds, try this quick air fryer pumpkin seeds (air fryer is best method and takes less time than traditional sheet pan roasting) or if you like sweet pumpkin seeds, try these hot honey roasted seeds (cayenne pepper is optional) in the oven instead.

  • I like them both, but I prefer air frying as it is the easiest way to get them super crispy and fast! Both these recipes are suitable for using raw pumpkin seeds purchased from the grocery store. 

Tips

  • In theory, you don’t need a pumpkin carving kit and a simple knife will get the work done just fine.
  • If you are using store-bought pumpkin seeds make sure they are labeled as ‘raw.’

What Size Pumpkin For The Best Roasted Pumpkin Seeds?

Go for big pumpkins! When it comes to pumpkins, remember: the bigger the pumpkin, the larger the seeds! If you're a roasted pumpkin seed enthusiast like me, consider snagging a colossal pumpkin just for its seeds.

  • Sometimes, those oversized pumpkins aren't ideal for carving—they might not hold their shape well after removing the seeds and strings, weakening the pumpkin's structure. That's why they tend to cave in once carved due to the weight.

What Are Pumpkin Seeds Good For?

Pumpkin seeds, also known as pepitas, offer several health benefits and in addition to delicious snack, they will brighten any recipe: 

  • Healthy Snack: Roast them, add some salt, or season them however you like for a quick, nutritious snack.

  • Optional soaking. Some prefer soaking the seeds in a bowl of water for a few minutes to facilitate the loosening of stubborn pumpkin debris. Stir the seeds in the water and then drain them before proceeding further.
  • Optional: Boil pumpkin seeds. An optional step is to boil the seeds in salt water before roasting, ideal for savory, salt-infused pumpkin seeds. For boiling, maintain a ratio of 2 cups of water to 1 tablespoon of salt for every ½ cup of seeds. Boil the seeds for approximately 10 minutes, adding up to 2 tablespoons of salt for a stronger salty taste. After boiling, strain the seeds without rinsing them, preparing them perfectly for roasting.
  • Dry pumpkin seeds. Following the rinsing process, lay the seeds on a clean kitchen towel or paper towel. Pat them dry to eliminate the excess moisture, ensuring they are reasonably dry before proceeding to cook or dry them further for storage.
  • Optionally, opt for oven drying for a quicker outcome: To expedite the drying process, preheat the oven to a low temperature (around 150-200°F or 65-95°C). Spread the seeds evenly on a baking sheet and place them in the oven for approximately 30-45 minutes.   • I like them both, but I prefer air frying as it is the easiest way to get them super crispy and fast! Both these recipes are suitable for using raw pumpkin seeds purchased from the grocery store.

Different Types Of Peanut Butter

Peanut butter can be purchased in many varieties - smooth or crunchy peanut butter, processed with additional ingredients such as sugar and preservatives, or pure natural peanut butter made from just peanuts and salt.

Believe it or not, peanuts are not actually nuts. They belong to the legume family!

How To Freeze Peanut Butter (4 Ways)

Freezing Peanut Butter In The Original Container

If the air-tight container or jar is glass, remove the lid and cover the top of the container/jar with plastic wrap. This will allow for expansion in the freezer without the risk of the glass breaking. 

Once thawed, you can place the original lid back onto the peanut butter glass jar. 

Freezing Peanut Butter In Resealable Freezer Bags

Use freezer-safe bags that seal well and are clean. I like to scoop the peanut butter into the plastic bag and flatten it on a baking tray or sheet with my hands or a rolling pin for easier storage in the freezer. 

Freezing Peanut Butter In Freezer-Safe Containers

Use any available freezer-safe container with an airtight lid that has been properly cleaned. 

Freezing Peanut Butter In Ice Cube Trays

This is a great choice if you only need smaller portions of frozen peanut butter to thaw. Once frozen, you can easily pop out the peanut butter cubes and thaw only what you want to use. 

Add the peanut butter to each ice cube and then press a sheet of plastic wrap directly down on the top of the ice cube tray. Wrap the entire tray with additional plastic wrap or with aluminum foil. 

Some modern ice cube trays come with sealable lids, so you can simply add a sheet of plastic wrap on top of the rows of filled ice cubes, followed by the ice cube tray lid.  

Can You Freeze Peanut Butter and Jelly Sandwiches?

Certainly, but be prepared for a longer defrosting time. Creating your own Uncrustables Sandwiches (mini version of PB & J sandwiches) is a quicker option, taking just 10 minutes to thaw.

How Long Can You Freeze Peanut Butter For?

When correctly stored, frozen peanut butter can last for 6+ months in the freezer.

Tips

  • The less oxygen the peanut butter is exposed to while in storage, the longer it will last and the better it will be preserved. 
  • Once thawed from frozen, always give the peanut butter a good stir in case any oil has separated from the butter. 
  • Don’t rush the thawing process by placing the frozen peanut butter in high temperatures, such as in the oven or microwave. This will alter the consistency and texture.

How To Thaw Frozen Peanut Butter

To thaw frozen peanut butter, remove it from the freezer and either allow it to thaw in the fridge overnight, or you can thaw it at room temperature on the countertop. Thawing frozen peanut butter in the fridge will not produce a spreadable consistency. 

For faster thawing, place the sealed container or bag filled with frozen peanut butter in a warm water bath. 

Only thaw the exact amount you need, and if you suspect that the peanut butter has spoiled, check the color and texture once thawed, but don’t eat it. 

How to Use Thawed Peanut Butter

Thawed peanut butter can be enjoyed as a topping, as a peanut butter spread, added to baked or no-bake treats, or to savory curries and many Thai-style dishes.

Allow enough time for the frozen peanut butter to thaw and stir it well before enjoying.

Alternative Ways To Store Peanut Butter

Freezing isn’t the only way to store peanut butter. Peanut butter can also be stored in a cool place in your pantry, away from direct sunlight, or in the fridge. 

Ensure your stored peanut butter is in an airtight container or jar. 

Opened peanut butter that is securely stored in a cool and dry place can last for up to 6 months (natural butter will last for less), while unopened peanut butter in the fridge can last for multiple years. 

The quality of the peanut butter and the addition of additives can also affect how long the peanut butter will last in storage.

Pumpkin bread is a naturally moist and dense bread made from pumpkin puree, which makes storing it correctly even more important. After all, the last thing you want is leftover pumpkin bread to become tough and dry!

Storing Pumpkin Bread Ahead of Time

If you are making pumpkin bread ahead of time, first allow the freshly baked loaf to cool completely on a wire rack. Once cool, wrap the entire loaf tightly in plastic wrap and store it at room temperature for up to 2-3 days or in the refrigerator in an air-tight container for up to 4-5 days.

Storing Leftover Pumpkin Bread

If you have leftover pumpkin bread, it can be stored in the same way as bread made ahead of time, except that any slices should be wrapped individually with plastic for maximum freshness.

Other considerations for Storage

Another factor you should consider when choosing the right storage method is whether the moist pumpkin bread recipe calls for a particular topping, such as a cream cheese frosting or a streusel topping.

Pumpkin bread with a cream cheese frosting will need to be stored in the refrigerator, not at room temperature; otherwise, the frosting can go off. A streusel topping, however, is much more forgiving and will allow you to choose between storage at room temperature and refrigeration.

Remember that crunchy toppings, such as a crumble streusel or chopped nuts, can soften over time when the bread is stored in the fridge.

How To Freeze Pumpkin Bread

Pumpkin bread should be cool before being stored in the freezer for up to 3 months. I recommend wrapping the pumpkin loaf tightly with plastic wrap and then with heavy-duty foil before transferring it to an airtight container or resealable plastic bag for freezing.

You can wrap and freeze individual slices too. 

When making your pumpkin bread ahead of time for storage in the freezer, consider leaving off any frosting, icing, or glaze. This will make it much easier to wrap and store without the risk of the topping sticking to the plastic wrap and looking like a mess. Once thawed at room temperature or in the refrigerator, top the pumpkin bread with freshly made frosting, icing, or glaze, and any other toppings you desire for the most flavorful bread. 

How To Reheat Pumpkin Bread

There’s nothing quite like a warm slice of pumpkin bread! Leftover pumpkin bread or pumpkin bread made ahead of time can be reheated in three ways:

Reheat in the Microwave

Add single slices of pumpkin bread to the microwave for about 30 seconds on high.

Reheat in the Oven

First, preheat the oven to 350F. Take the entire loaf or individual slices and wrap them in aluminum foil to protect the crust of the pumpkin bread from burning and the bread from drying out. Heat the pumpkin bread slices for about 5 minutes and the entire loaf for a little longer.

Reheat in an Air Fryer

Believe it or not, reheating bread in an air fryer can often lead to better results than in the oven and microwave, but only if you reheat it on a low temperature for a short time (about 1 minute). 

Don’t reheat individual pumpkin bread slices at an oven temperature higher than 320F otherwise, you will be recooking the bread instead.

Can I substitute brown sugar for white sugar in pumpkin bread?

Most pumpkin bread recipes call for white granulated sugar and brown sugar. The white granulated sugar adds sweetness and a crispy crust around the baked bread, while brown sugar creates moisture and depth of flavor. I don’t recommend using just one type of sugar in this recipe, as it could affect the texture.

Can you substitute butter for vegetable oil in pumpkin bread?

Yes, you can! You can substitute butter for oil using a 1:1 ratio. This ratio works when the recipe calls for vegetable oil, canola oil, olive oil, and coconut oil. 

When it comes to using butter, first melt the butter and then allow it to cool before combining it with the rest of the wet and dry ingredients. If the recipe calls for ½ cup of oil, use ½ of melted and cooled butter, preferably unsalted.

Why is my pumpkin bread so moist?

There are a few factors that can lead to overly moist pumpkin bread. More commonly than not, not measuring the wet ingredients accurately and adding more than required will result in overly moist bread. 

Other factors include not baking the bread loaf for long enough, letting the bread batter sit for too long, not adding enough baking powder and/or baking soda, or not removing excess liquid from canned or homemade pumpkin puree. 
Since all ovens differ, conduct a “toothpick test”, inserting a cake tester, wooden skewer, or a paring knife into the center of the loaf. The skewer or knife should come out clean. If there is moist batter attached, then the bread should be baked for longer, and you may need to cover the bread loaf with aluminum foil so that the top and edges of the bread do not burn.

How do you fix undercooked pumpkin bread?

Fixing undercooked pumpkin bread is pretty simple. Return the undercooked loaf to the oven at 350F and bake for an additional 10-20 minutes. An undercooked pumpkin bread can even be salvaged after the loaf has been removed from the oven and cooled. 

Depending on how brown the top crust of the bread is, you may want to cover the loaf with aluminum foil so that it doesn't burn.
