Ingredients For Chicken Tenders In Air Fryer

  • Chicken - you can use chicken tenders or tenderloins or simply slice boneless, skinless chicken breasts into large strips.
  • Spices - keep it straightforward with smoked paprika, Italian seasonings, garlic powder, salt, and pepper.
  • Olive oil - any neutral-flavored oil can substitute for olive oil.
  • Garnish - use parsley or dill and lemon slices for a fresh garnish.

How To Make Air Fryer Chicken Tenders

1. Prep. Preheat the air fryer to 190°C/375°F and lightly grease the basket.

2. Season the chicken. Mix chicken cuts with oil and seasonings in a bowl.

3. Arrange the Chicken in Your Air Fryer. Place in a single layer in the air fryer basket.

4. Air Fry at 375°F, Flipping Halfway Through. Air fry for 8-10 minutes, flipping halfway.

Use a kitchen thermometer to check for doneness; the internal temperature should reach 165°F.

5. Cook Remaining Batches. You can keep prior batches warm in the oven. ENJOY!

Rest for 5 minutes, then sprinkle with parsley and lemon juice. Serve with dipping sauce. Enjoy!

Tips

  • Cooking time. In the air fryer, thinner chicken tenderloins usually cook in 7-10 minutes, but this varies with thickness. For thicker cuts, don't extend cooking time; instead, check the internal temperature with a meat thermometer. Once it reaches 165°F, the chicken is done.
  • Breaded chicken tenders. You can also make breaded chicken tenders with panko or breadcrumbs (gf if needed). The cooking time remains the same; avoid adding extra spices, seasonings, or oil.
  • Leftover ideas. Leftover chicken tenders make a great addition for dinner salads, try kale salad, avocado salad, or kale caesar salad.
  • Cooking times vary by model. The duration for cooking chicken tenders in the air fryer depends on your specific model and desired level of crispiness. For instance, in my Cosori 5.8 quart air fryer, I cook them at 375°F,  typically from 8-12 minutes.
  • Make them in the oven. The oven method requires more time. Preheat the oven to 350°F and place the chicken tenders on a baking sheet. Bake for 25-30 minutes, ensuring the internal temperature reaches 165°F to ensure they're fully cooked.

Freezing And Storing Instructions

  • To Store. Place chicken in an airtight container in the fridge for up to 4 days.
  • To Freeze. For freezing, arrange cooked air fryer chicken tenders in a single layer on a baking sheet. Once frozen solid, transfer them to an airtight, freezer-safe container. They can be stored for up to 3 months. When ready to eat, reheat directly from frozen.
  • To Reheat. To reheat chicken tenders in the Air Fryer, preheat to 350°F, then add tenders in a single layer and cook until warmed through. Alternatively, you can use the oven at 350°F; avoid the microwave to prevent sogginess. If reheating from frozen, add extra minutes until warmed through.

Spicy skillet potatoes aka Gamja Jorim is a deliciously flavorful Korean side dish that's quick and simple to make. Baby potatoes are boiled then braised in the skillet and coated in a sweet and spicy glaze. So good!

Ingredients For Skillet Potatoes

  • Baby potatoes - use baby potatoes with skin on; this will help the glaze to cling better. Both baby red and white mini potatoes are suitable, or a combination of both can be used. Begin by boiling the potatoes before pan-frying and simmering them in the sauce until done.
  • Sauce - tamari or soy sauce, honey, garlic, and Gochugaru paste (Korean red chili paste), water. Gochugaru adds delicious smokiness and heat to the sauce, don't skip it. Alternative? Chopped chili peppers!
  • Lemon juice - or mild vinegar. While boiling the potatoes toss some salt and a squeeze of lemon juice or splash of vinegar into the water. It really boosts the flavor and keeps them nice and firm while cooking. Plus, it takes away that slight bitterness some potatoes can have.
  • If your baby potatoes are too large, cut them in half. Just keep in mind the exposed halve without skin, may become fragile during cooking. Be gentle when handling and turning them over to avoid breakage.

How To Make Spicy Skillet Potatoes

The Sauce. Combine all sauce ingredients in a bowl.

Potatoes. Boil potatoes in salted water with 2 teaspoons of lemon juice (or mild vinegar).

Fry in skillet. Drain in colander and set aside. In a large skillet over medium heat, fry potatoes until golden brown.

Add sauce, simmer until thickened, stirring often for even coating.

Off heat, stir in sesame seeds, garnish with green onions, and serve immediately. Enjoy your meal!

Tips

  • If your baby potatoes are larger than bite-sized, cut them in half.
  • Potato alternative. You can also utilize regular potatoes, just make sure to use less starchy ones like white or Yukon gold hold their shape best. Red, fingerling, and new potatoes are also great options, and you can leave the skins on if you prefer.
  • Make a stir fry. This spicy sauce is incredibly good with anything. Instead of using only potatoes, throw in a mix of bell peppers, mushrooms, baby corn, carrot, red onion, zucchini. Just cut the veggies into large chunks, similar to one another and cook in the skillet with the sauce.
  • Don't overboil the potatoes, the skins will start to come off.

Storing Leftovers

  • To Store. While ideally enjoyed fresh, these potatoes can be refrigerated in an airtight container for 3-4 days.
  • To Reheat. Reheat in skillet with a little oil or butter or in the microwave. I like to make some extra sauce for serving.

Ingredients

For Potatoes

  • 1 ½ pounds baby potatoes
  • 2 tablespoon vegetable oil or any neutral oil
  • 1 tablespoon toasted sesame seeds
  • green onions chopped for garnish

For Sauce

Sausage dirty rice is a delicious one-pot Southern Louisiana dish made with jasmine rice, cajun seasoning, chopped bell peppers, celery, onion, broth, and ground sausage. This version of dirty rice calls for simple ingredients that can be made in one large pot or skillet for easy weeknight dinners.

Ingredients For Dirty Rice

  • Pork breakfast sausage - I’ve used Cumberland breakfast sausage, but you can use something similar such as ground pork, bulk pork sausage, ground beef, Italian sausage, cajun sausage, turkey sausage, or beef sausage. Make sure to have the skins removed for this recipe. Gluten free note: different brands vary. Whatever sausage you use, check the ingredients to make sure it is gluten-free or use ground meat instead.
  • Onion - I’ve used brown onion, finely diced, but you could also use yellow onion. 
  • Bell pepper - Green bell peppers are excellent, but you can use red bell pepper or yellow bell pepper as well. Dice the bell pepper into small pieces but not very fine otherwise, it will wilt while cooking. 
  • Celery - You’ll need 2-3 stalks, diced. 
  • Garlic - Using garlic cloves will offer the best flavor. I’ve used 4 garlic cloves which is about 1 teaspoon's worth. Pre-minced garlic or garlic powder could also be used. 
  • Seasoning and spices - This dish includes cajun spice, salt, and black pepper. 
  • Herbs - Thyme (2-3 sprigs or 1 teaspoon of dried thyme) and 2 large bay leaves. 
  • Broth - I’ve used chicken and veggie broth, beef or just vegetable broth is totally fine too. If you use store-bought, then opt for low sodium if possible. This way you can regulate the amount of seasoning and salt.
  • Rice - Long grain rice such as basmati or jasmin is ideal. We are cooking everything in one pan, including rice, so it should go in uncooked. I do however rinse it before. Brown rice is another option although it will require additional cooking time.
  • Garnish - Use green onions, scallions, chopped parsley, or cilantro as garnish.

How To Make Dirty Rice

In a large skillet, cook the sausage meat over medium-high heat, breaking it down into small pieces with a wooden spatula.

Cook until no longer pink. Drain the fat and remove it to a side plate.

In the same skillet, saute onion, bell pepper, and celery. When the onion is becoming translucent add garlic, cajun, salt, and pepper.

Cook for another 30 seconds. 

Stir in uncooked rice (I washed and rinsed it prior), pour in the broth, add bay leaves, and thyme, and return the meat to the skillet.

Bring to a boil, cover with a lid and reduce the heat to medium-low. Simmer for 18 minutes until all the water has evaporated and the rice is cooked. 

Fluff the rice with a fork, remove the thyme, and bay leaves and serve with green onions.

I recommend rinsing the rice before adding it to the skillet to eliminate debris. Rinsing the rice also removes some excess starch which helps prevent the rice from clumping.

Usually, breakfast sausages come with seasoning and herbs, so you are getting plenty of flavors! Also, even low-sodium broth will add a lot of flavors. This means you don't need to add any salt or pepper. Add it to taste toward the end of cooking, if needed at all.

Tips

  • You can use leftover rice for this traditional dirty rice, but then reduce the cooking time when adding the rice to the skillet otherwise, the rice will become mushy. 
  • Pork breakfast sausage provides delicious flavor from the fat content. You could also use ground hamburger or another sausage, such as chicken, turkey, or even plant-based smoked sausage.  
  • This rice dish can easily be doubled if you plan on serving a larger crowd. 
  • This delicious dish isn’t overly spicy, the heat will depend on which sausage you are using and the amount of cajun seasoning. I have added just a little of the seasoning as mentioned in the recipe and it is well seasoned and not spicy.

Serving Suggestions

The dirty rice is very fulfilling on its own!

I prefer serving this with a very simple garden salad or cucumber and tomato salad. These are our family's favorite and so easy to whip up!

Freezing And Storing Instructions

  • To store, allow the dish to cool and store in the fridge for 2-3 days. When reheating add some warm water or broth so it's not dry.
  • To freeze allow the dirty rice to cool completely. Transfer to a freezer-friendly container and freeze for up to 2-3 months.
  • To reheat, thaw it in the fridge and warm in the skillet or in the microwave.

30 Minute Cilantro Rice

This rice recipe is almost a mandatory accompaniment to any of our family’s Mexican food dinner nights. Whether we’re making Taco Dinner Board, Sweet Potato Tacos, Vegan Meat Tacos, or Healthy White Bean Chicken Chili, a bowl of this fluffy rice is always on the table.

How To Make Cilantro Lime Rice

Rinse the rice under cold water in a fine-mesh sieve until it runs clear. Drain well before cooking. Alternatively, soak the rice in a bowl of water for up to 30 minutes to reduce starch.

Heat olive oil in a large skillet and saute garlic until fragrant.

Add uncooked rinsed rice, season with salt and pepper, and toast for 2-3 minutes.

Pour in broth, reduce heat, add lime zest, and simmer with a lid for 20-25 minutes.

Remove from heat, add lime juice, and let it sit for 10 minutes.

Fluff with a fork, stir in cilantro, and serve as a side dish or with various meals.

How To Cook Cilantro Rice In Rice Cooker

  • Put rinsed rice, water (following the manufacturer's guidelines), salt, and optional oil into the rice cooker.
  • Close the lid, plug it in, and start cooking according to the manufacturer's instructions.
  • Once done, mix in cilantro, black pepper, lime juice, and sauteed garlic. Adjust the salt to your taste and serve it hot or at room temperature.

Storing and Reheating Instructions

Cool the cooked rice, then portion it into zip-top bags or airtight containers and freeze for 2-3 months. When needed, thaw at room temperature and reheat in a skillet or microwave.

  • Leftover rice stays good for 3-4 days in an airtight container or resealable freezer bag in the fridge.

Notes

Instead of garlic powder, you can use 1 fresh garlic clove, minced, and paste-like. But every garlic is different and if yours is way too strong use less or go for garlic powder.  Personally, I don't like fresh garlic taste with a simple dish as rice but it's a personal preference.  
For Extra flavor I like to add in a little Vegeta seasoning. This is a universal all-purpose seasoning blend (usually yellow), made from vegetables, herbs, and spices. But if this is not available where you are located, I'd recommend dry vegetable or chicken bouillon cube (bio/organic preferred).
My favorite way to use this rice is in Buddha Bowls and as a side with Sweet Potato and  Kale Tacos and Vegan Meat Tacos

Ingredients For Fried Rice

  • Pork - use leftovers from slow cooker ribs or use raw or cooked pork tenderloin cut into strips or diced (about ½-1 inch thick). If using raw, add it after the onions and cook on high for about 3-4 minutes on both sides and then continue with the remaining ingredients. 
  • Rice - a long-grain type of rice. I love using jasmine rice, it has a fluffy texture, not sticky, and is rather soft. Most Chinese restaurants use this for fried rice dishes. 
  • Snow Peas - if using frozen, add them to the pan last minute, they should remain crisp and not very soft or mushy No problem! Substitute these with peas, thinly sliced or diced bell peppers, grated or diced carrots, mushrooms, or corn.
  • Soy sauce - make sure the one you are using is low sodium (healthier!) and gluten-free labeled. If not sure coconut aminos are naturally gluten-free and will work great instead of soy sauce.

How To Make BBQ Pork Fried Rice

Saute aromatics. In a wok pan with sesame oil over medium-high heat, saute onion, ginger, garlic.

Fry the egg. Add eggs and scramble until cooked through.

Add the rest. Add snow peas, pork (diced, about ½-1 inch thick), soy sauce, Barbecue sauce or leave it for later to drizzle on top (add 1-2 tablespoons or to taste).

Add rice. Follow with rice and stir until everything is warmed through, reduce the heat accordingly.

If rice is straight out of the fridge, you'll need a few minutes more to get it warmed through.

Serve! Remove from heat and serve with green onions and more Barbecue sauce drizzled on top.

Tips

  • I also love adding pineapple similar to my sweet and sour chicken.
  • Substitute pork with cooked chicken, turkey, ham, beef strips or tofu.
  • Allow rice to cool - Cook rice until al dente, then transfer it to a fine-mesh strainer, run cold water through it, and let it cool. This stops the cooking process and ensures fluffy rice. In fried rice recipes, it's best to use cooled rice to prevent overcooking and mushiness.
  • Add ons - A classic Asian favorite is mung bean sprouts, providing nutrition and a crunchy element. Add them toward the end, after the rice.

Freezing And Storing Instructions

  • To Store. Store the leftovers in a larger food container, without squeezing the rice in it tightly. Keep it properly sealed in the fridge for 2-3 days.
  • To Freeze. Freeze fried rice in an airtight, freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.

Rice can spoil quickly; I recommend consuming it within two days or making only what will be eaten on day one.

Ingredients

  • Cabbage - opt for a medium-sized green cabbage. Alternatively, a medium head of savoy cabbage can be used as a substitute.
  • Onion - choose a medium-sized yellow onion, or you can substitute with a white onion.

📋 Brown sugar - although it is optional, you can add 1-2 tablespoons when adding the spices and tomato paste.

Instructions

Step 1 - Preheat the oven.
Position a rack in the middle of the oven and preheat to 350 degrees.

Step 2 - Cut the cabbage.
Cut the cabbage in half through the core, then cut each half into 3 wedges, making sure that each wedge retains some core to hold it together, so that you have 6 wedges.

Season with salt. 

Step 3 - Cook the cabbage.
In a large, ovenproof, high-sided skillet (cast iron skillet) over medium-high heat, heat 1 tablespoon olive oil and 2 tablespoon butter.

Add 3 wedges of cabbage to the skillet and sear until the cabbage is well browned and slightly softened, 3 to 4 minutes per side.

Transfer the cabbage to a plate, and then repeat with another 1 tablespoon of the oil and the remaining cabbage, transferring the cabbage to the plate once browned.

Step 4 - Saute onion with spices and tomato paste.
Add the remaining 2 tablespoons of the oil to the same skillet.

Add the onion and cook, stirring, until softened, about 3 minutes.

Add garlic, ground cumin, paprika, and black pepper, (brown sugar if using).

Saute for 30 seconds until the aroma comes out.

Add ¼ cup tomato paste into the skillet and simmer for 2-3 minutes, until tomato paste starts to darken. 

Step 5 - Add water and simmer.

Stir in water, stir through and let it come to a boil. Taste for seasoning, if needed add more salt.

Return the cabbage to the skillet, some corners can overlap which is fine. 

Step 6 - Bake and caramelize the cabbage in the oven.

Place the pan into the oven, without the lid. And bake for 40-50 minutes.

The cabbage will soften and half of the liquid should evaporate. 

This caramelized cabbage goes well with air fryer ribs, or simply enjoyed with fresh dill, sour cream, and optional parmesan.

Tips

  • Despite initially seeming like a lot, the cabbage will significantly reduce in volume while cooking.
  • Saute the cabbage and onions over medium-high heat to achieve proper caramelization.
  • For added texture, consider incorporating nuts or seeds towards the end of the cooking process.
  • To create a complete meal, include cooked proteins like ground chicken or shrimp towards the end or cook them separately.

If you notice that the tomato paste has thickened too much and the pan is drying out or turning dark before the cabbage reaches its desired tenderness, simply pour in a bit of water to loosen it up, allowing the cooking process to continue smoothly.

Instructions

Cooking trout in the oven within parchment paper or foil packet is a such an easy and brilliant method, often referred to as cooking "en papillote" or "in paper."

Prep. Preheat your oven to 400°F (200°C).

Make The Honey Mustard Marinade Sauce. Combine Dijon mustard, honey, soy sauce, and sesame oil in a small bowl or jar. Set aside.

Season the fish. Season the trout fillets generously with salt and black pepper.

Make a foil packet. Grease foil with olive oil, place seasoned trout fillets (skin side down), and pour honey mustard mixture over them.

Reserve some for basting the fish before serving.

Seal the foil packets securely. Arrange the foil packets on a baking sheet and place them in the preheated oven.

Cook. Bake for 10 to 15 minutes.

Check one fillet after 10 minutes; the flesh should easily flake with a fork.

Once done, remove the fish in foil packets from the oven.

Pour any remaining sauce over the cooked trout, sprinkle them with mixed sesame seeds, and garnish with parsley or cilantro.

Serve the baked trout with lots of fresh lemon slices and your preferred choice of vegetables.

How To Tell If Trout Is Cooked

Baking time depends on fish thickness and desired doneness.

Aim for an internal temperature around 125°F/52°C (FDA recommends 145°F/63°C), verified with an instant-read thermometer.

In the absence of a thermometer, observe these cues to ensure your trout is cooked:

  1. Clarity: Notice the transition of trout flesh from translucent to opaque.
  2. Flakiness: Gently press the flesh with a fork to check its ability to easily flake apart.

  • Is rainbow trout sustainable? Most available rainbow trout are farm-raised, so opt for responsibly farmed options. 
  • Explore obtaining rainbow trout from nearby farmers' markets or directly from local fish farms. This choice enables you to support local producers and gain a clearer insight into the fish's journey from farm to table.
  • Ensure to selection of reliable suppliers committed to sustainability and transparency. Verify if they hold certifications like the Aquaculture Stewardship Council (ASC) or the Best Aquaculture Practices (BAP) label.

Quality of Trout Matters

Assessing fish quality:

  1. Skin – A shiny, slightly slimy skin signifies freshness and quality.
  2. Fins – Seek defined, perky fins; avoid ragged or broken ones.

Tips

  • Honey Mustard Glaze - in this recipe I’ve made sauce for the whole trout but if you just using 4-5 fillets divide the sauce ingredients into half.
  • Baking. Depending on your oven and the size of your trout you may need to adjust the cooking time. 
  • Make the sauce in advance. It can be stored in the fridge for up to 3 days.
  • Leftover sauce can be consumed cold or warm and used in a variety of sandwiches, wraps, and salads.
  • If you don’t have fresh trout you can use frozen, thaw it and make sure to pat it dry to remove any excess water before cooking.
  • Don’t skip the foil. Baking trout in foil packets helps the fish cook perfectly tender. While the fish fillets bake, the sauce coats the fish nicely, and all the juices are formed at the bottom of the packet.
  • Inspect for pin bones by running your finger along the trout to detect these small, translucent bones. Utilize a pair of tweezers as a handy tool to remove them.
  • To prevent sticking, apply cooking spray to the foil before placing the trout to bake and avoid adherence.
  • Exercise caution when opening the foil, as there may be steam trapped inside. Gently unfold the sealed edges to prevent burns from the released steam!
  • If you like fresh garlic flavor, you can chop it finely (about 1-2 teaspoons) finely and add on top of the fish or mix in the marinade before baking.
  • Add some red chili flakes to make it spicy.

Cooking time will vary from one air fryer to another so use a meat thermometer to test for doneness. Cooked pork ribs will have an internal temperature of 145 degrees F. 

How To Make Air Fryer Ribs

Mix the spices. Combine salt, garlic powder, onion powder, paprika, smoked paprika, and cayenne pepper in a large bowl with the pork ribs.

Stir to coat the ribs evenly with the dry rub. 

Then, preheat the Air Fryer to 375F and set the timer to 15 minutes.

Place ribs in the air fryer basket. Arrange the ribs in a single layer in a horizontal position with the meat side down in the preheated air fryer.

Flip the ribs halfway through the cooking process. If your ribs are quite thick they may need more time to cook.

Try to avoid overcooking so the ribs don’t dry out.

  • For a low carb or sugar-free meal choose a sugar-free BBQ sauce or eat the ribs without. 
  • To add a touch of sweetness, mix brown sugar into the spice rub.
  • Slow Cooker - make these ribs in crock pot.

You can substitute spare ribs for the rack of ribs but you may need to adjust the cook time or monitor the ribs closely so they don’t overcook.

  • To store. Place leftover ribs in an airtight container or wrap in aluminum foil and store them in the refrigerator for up to 3-4 days. Allow ribs to come to room temperature before storing.

  • Thawing and Reheating. Thaw the pork ribs in the fridge overnight. Reheat in the air fryer, oven, or toaster oven.

Ingredients

  • Long-grain rice - I used basmati rice but an equal amount of jasmine rice can also be used for similar results.
  • Turmeric powder - a crucial ingredient in this recipe, though you can substitute a small amount of saffron to add color to the rice.
  • Butter - you can also use coconut oil. Butter not only adds delightful flavors to the rice but also contributes to achieving that perfect soft and fluffy texture!
  • Onion, garlic - sauté these aromatics in butter to maximize their flavor before coating the rice with this heavenly mixture.
  • Chicken stock - you can use vegetable stock or any other preferred broth. Using stock ensures that each grain of rice absorbs flavor, significantly enhancing the overall outcome.
  • Sal, pepper - use to taste, if the butter and broth are high in sodium use just a little as needed.

Rinse the rice before cooking to remove debris and starch.

How To Make Yellow Rice

STEP 1: Heat butter in a skillet over medium heat until melted. Sauté onion and garlic until fragrant, about 1-2 minutes.

STEP 2: Stir in turmeric powder, then add rice, ensuring even coating and light toasting.

STEP 3: Pour in stock, season with salt and pepper, then mix well and bring to a boil. Reduce heat, cover with a lid, and simmer for 15 minutes.

STEP 4: Remove from heat and let it rest for 5 minutes before fluffing with a fork. Garnish with chopped parsley and serve. Enjoy!

Any leftovers can be easily used in fried rice!

Tips

  • Avoid stirring rice while it cooks to prevent it from becoming mushy. After cooking, let it rest for 5 minutes before fluffing with a fork.
  • Keep the lid closed until the rice is fully cooked and rested to retain steam for optimal results.
  • Use a heavy pot with a tight-fitting lid to prevent steam from escaping. Alternatively, seal the pot with foil before covering it with the lid.
  • Brown rice - I don't suggest using brown rice for this yellow rice recipe as it has a longer cooking time and requires different liquid proportions. However, if you're comfortable substituting brown rice for white rice, you can try it, though I haven't tested it myself.
  • Allow the rice to rest for a minimum of 5 minutes before fluffing it with a fork. After the timer goes off, remove the rice from the heat and keep it covered for approximately 5-10 minutes. This resting period enables the rice to soak up any remaining moisture, yielding a tender and fluffy texture.

These Curry Noodle Stir Fry are so easy to make and contain all the ingredients you want in delicious one-pot noodles. Perfect for gluten-free and vegan diet.

These noodles are not spicy, and are light but will fill your stomach for the half of the day. I often prepare these for lunch and dinner as they take almost no time to make and are delicious.

Feel free to add some spicy ingredients or some protein like poultry or shrimps if you feel so.

How To Make Noodle Stir Fry

STEP 1

In a large skillet cook onion until translucent and slightly brown.

Add ginger, garlic, curry, add more olive oil to the skillet if needed.

STEP 3

Meanwhile boil the rice noodles following the instructions on the package.

Add mushrooms to the skillet, cook for few minutes and follow with peas and spinach.

Transfer to serving bowls and squeeze ¼-½  lime juice on top of the noodles, garnish with sesame seeds and enjoy!

Storing Leftovers

  • Store stir fry in the fridge for about 2-3 days, just add some vegetable stock or coconut milk whenever you ready to reheat them.
  • You can also freeze the noodles if you want for up to 2 months, however the texture of noodles will change.

One-Pot Curry Coconut Noodles (Vegan, Gluten Free)

Curry Noodles Stir Fry

These Curry Coconut Noodles are so easy to make and contain all the ingredients you want in a delicious one pot noodles. Perfect for gluten free and vegan diet.

Ingredients

  • 1 cup coconut milk
  • 2 teaspoon curry powder or you can also use 1 tablespoon red curry paste (but flavor different)
  • 2 small garlic cloves minced
  • cup fresh peas
  • 6 mushrooms
  • ½ pound noodles
  • 3 cup spinach
  • ½ of a brown onion diced
  • ½ of one whole lime juiced
  • 2 teaspoon sesame seeds
  • vegetable oil for cooking
  • 1 knob ginger (about 1 inch) grated

Instructions

  • In a large skillet cook onion until translucent and slightly brown.
  • Add ginger, garlic, curry, add more olive oil to the skillet if needed.
  • Meanwhile, boil the noodles following the instructions on the package.
  • Add mushrooms to the skillet, cook for few minutes and follow with peas and spinach.
  • Stir in the noodles and pour in coconut milk, ¾ cup water or vegetable stock. Mix well until noodles covered in sauce. Season with salt and pepper to taste. Leave it to simmer a couple of minutes.
  • Transfer to serving bowls and squeeze ¼-½ lime juice on top of the noodles, garnish with sesame seeds and enjoy!

Notes

Store: Can be stored in the fridge for about 2-3 days, just add some vegetable stock or coconut milk whenever you ready to reheat them.
You can freeze the noodles if you want up to 2 months.
