Which pepper is the most nutritious?
Red peppers have the most nutrition because they’ve been on the vine longer. Green peppers are harvested earlier, then yellow, orange and red.
Red peppers also taste more sweet, yellow ones semi-sweet and green ones can taste a bit bitter.
Instructions
Preheat oven to 350 F.
Wash and cut bell peppers lengthwise and remove seeds. Brush generously with olive oil all over the peppers and transfer to a baking sheet lined with parchment paper, bake until they are soft. (15-20 minutes).
Meanwhile, on a large pan saute onion and garlic. Add 2 tablespoon oregano, 1 teaspoon basil, cook a bit more and then add the beef. Salt and pepper to taste. Cook the beef until brown but my advice, let it be slightly undercooked because they’ll go in the oven right after.
Add can of crushed tomatoes, mix well and add cooked rice. (cook for 5 minutes)
Next, in a small bowl mix grated cheese and 1 teaspoon oregano. Set aside.
When peppers are cooked take them out of the oven and fill in with just prepared beef mixture. Fill the peppers fully and top with grated cheese mix.
Pop in the oven on the same parchment paper and bake for about 20 minutes and until cheese is properly melted.
Serve immediately!
