Ingredients
The full recipe and ingredients can be found in the recipe card below this post.
- Butter and egg - these types of ingredients should be at room temperature as this will help to incorporate them into the cookie dough mixture better.
- You can use salted or unsalted butter. If you use salted butter, then omit the salt in this recipe.
- Flour - I’ve used gluten-free flour (Schar Mix C), but you could also use something like Bob’s Red Mill, a one-to-one substitution, or plant-based flour such as almond flour and coconut flour.
- The flour blend you choose should be with xantham gum, if not you may have to add it (the usual ratio is ¼ teaspoon for each cup of flour used, so in this recipe, you have to add a little less than ½ teaspoon). If you don’t need these cookies to be gluten-free, feel free to use all-purpose flour instead. I haven't tried but the result should be equally good but the flavor is slightly different, of course.
- Cocoa powder - These cookies are already sweet enough, so I often prefer unsweetened cocoa powder.
- Baking soda - Check the expiry date on your baking soda, as this will impact the rise of the cookies.
- Vanilla extract - I always use high-quality vanilla extract for maximum flavor in baked goods.
- Sugar - I’ve used a combination of brown sugar and white granulated sugar (½ cup each). The white sugar creates a crispy outer edge to these cookies, while the brown sugar adds depth of flavor and moisture. Both dark and light brown sugars can be used as well as raw sugars.
- Milk - Whole milk is best for flavor, but you could use reduced-fat milk too.
- Red food coloring - You can use liquid or gel food coloring to create a deep red color in these cookies. Whichever you choose, choose high-quality ingredients. It may come at an extra cost, but it's worth it! Add a small amount of food coloring at a time for your desired color. I used about 1 ½ teaspoons worth.
- White chocolate chips - This adds a pretty white chocolate chip contrast to these red velvet cake mix cookies. Just like with my Oreo Cream Cheese Cookies, you could use vegan white chocolate chips, white chocolate chunks, or even add extra chocolate chips for added decadence.
Instructions
In a medium bowl combine together salt, baking powder, cocoa powder, and flour.
In a large mixing bowl, beat the butter and sugar for 4 minutes until fluffy with an electric hand mixer.
Add the egg, milk, and vanilla extract and continue to whisk. Stir in your food coloring.
I find that gel coloring works best as it distributes evenly in the mixture. Add small batches at a time referring to packaging instructions.
Now combine wet and dry ingredients, fold in chocolate chips, cover, and let chill in the fridge for 1 hour.
The cookie dough should resemble playdough and you should be able to easily shape it into small balls.
When ready to bake, preheat the Air Fryer to 325 degrees Fahrenheit.
Take about 1 heaping tablespoon of dough and roll it with your hands into a ball. Place into air fryer basket.
Bake the dough balls for 5-7 minutes. Transfer to a wire rack to cool completely after which they can be stored in an airtight container.
Tips
- Make sure that the egg and butter are both at room temperature, as this helps them to mix much better into the cookie batter.
- You can easily double the ingredients to make an extra batch of chewy red velvet cookies and store them in the freezer to enjoy whenever you like.
- Alternatively, freeze the raw cookie balls on a parchment paper-lined tray for easy storage.
- Always check the expiry date on the label of your baking soda, as old or expired ingredients can affect how these cookies rise while baking.
- Use a cookie scoop or 1 tablespoon measuring spoon for ease of measuring and to ensure uniform-sized cookies that will bake evenly.
- Don't roll cookie dough for too long in your hands otherwise, the dough will warm and create spreading.
- Brown sugar is great for cookies for its caramel flavor and chewy texture but you can also use one of these brown sugar substitutes.
- Add the extra chocolate chips on top of the cookies once they are baked and still warm enough for the chocolate chips to be gently pressed into the tops of the cookies.
- Spread the cookie balls out in the air fryer basket with enough space so that the cookies can spread slightly without there being any overcrowding of the basket.
- It’s normal for these air fryer cookies to be soft once freshly baked in the air fryer. They will harden as they cool.
Freezing And Storing Instructions
- To Store. Any leftover air fryer red velvet cookies can be stored at room temperature for 2-3 days. Cover them with plastic wrap tightly, and keep them in an airtight container or a cookie jar to prevent them from drying out.
- Don’t store these in the fridge, they will dry out very quickly and it won’t make them last longer.
- To Freeze. You can freeze the cookies or unbaked cookie dough for up to 2-3 months in a freezer-friendly bag or container. Thaw at room temperature.

Can I bake the cookies in a oven if I don't have a Air fryer?
Julia | The Yummy Bowl
Hi Michelle, I haven't tried these in the oven BUT for chocolate chip cookies like these, you could try the ''standard'' 350F for 10-12 minutes. I'm curious to know how these will be in oven
