    Strawberry Cheesecake Overnight Oats

    This Strawberry Cheesecake Overnight Oats recipe is a sweet and delightful way to start your day! It combines the flavors of luscious cheesecake with the sweetness of fresh strawberries loaded with carbohydrates, protein, and fiber to keep you powered throughout the day.

    You can also try our cranberry overnight oats for variation and serve with easy tropical smoothie or green juice.

    • Fresh strawberries- juicy strawberries are perfect for overnight oats! It incorporates a sweet and tart flavor and a vibrant color to the dish which makes it even more appealing. 
    • Rolled oats-  also called old-fashioned oats, this type of oats have a slightly chewy texture and are well-suited for soaking in liquid overnight, resulting in a creamy and satisfying consistency by morning.
    • Greek yogurt-  this will give the overnight oats a tangy flavor and richer texture. If you want to boost the fruity flavor even more, you can use any berry-flavored yogurt of your choice. 
    • Milk- I used oat milk in this recipe but feel free to use any type you like. Full-fat milk will give you a thicker and tastier finish. 
    • Cream cheese- adds a luxurious taste and creamy mouthfeel! 
    • Chia seeds and flax meal - these superfoods are not only good for you but will also add a nice thickness to the oat mixture. 
    • Vanilla extract- for a pleasant flavor and aroma. 
    • Honey- or feel free to use date paste.

    Instructions

    Make the oat mixture. Stir all ingredients in a bowl.

    Separate into desired portions. Divide between serving cups or wide mouth mason jars.

    Chill. Refrigerate for at least 4 hours to overnight. 

    Recipe Troubleshoot

    Why are my overnight oats clumpy?

    • Too little liquid was added. Make sure that you follow the measurements in the recipe correctly. The oats and chia seeds will absorb the liquid as they soak so it is okay for the mixture to be watery initially. 
    • Dry spots. Mix the ingredients thoroughly and make sure that there are no dry pockets. These will later on result in dry, hard clumps.

    Why are the oats too chewy/hard?

    Ideally, your strawberry cheesecake overnight oats will have a smooth and creamy texture. If the oats are too chewy or hard, it can be because of the following reasons: 

    • Not soaked enough. Give the oats and chia seeds enough time to soak and soften, ideally overnight or for at least 4-6 hours. If you find your oats are still hard after the recommended soaking time, you can try stirring them again or adding a bit more liquid.
    • Use the right oats. Never use steel oats or instant oats when making this recipe. Steel cuts are too hard and will not soften even when soaked overnight, while instant oats will become mushy. 

    Tips

    • While it is quicker to mix everything in a bowl, you can add the ingredients in layers for a more fancy look. 
    • Jars - You can use smaller about 8-12 ounce weck jars, mason jars, glass jars with plastic lids, or those with bamboo lids as alternatives.
    • Some brands of oats are more absorbent than others. If the mixture is too thick, add more milk or yogurt to achieve the desired consistency.
    • If the strawberries you are using as sweet enough, consider reducing the amount of honey to prevent the oats from becoming overly sweet. On the other hand, if they are too tart, adding more honey will help. 
    • Using room temperature or warm milk will make the oats and chia seeds absorb faster. 
    • Give the oats a good stir before serving to make sure all ingredients are well-mixed, and there are no pockets of clumpy ingredients.

    Serving Suggestions

    You can enjoy this chilled for a refreshing morning meal. However, you can also warm it up using the microwave if that is what you like. Top the jars with more fresh strawberries, mint, coconut flakes, syrup, or any topping of your choice.

    Freezing And Storing Instructions

    • To Store. You can keep the overnight oat jars in the fridge for up to 4 days. 
    • To Freeze. Freezing overnight oats can affect the taste, texture, and quality of the dish, so we do not recommend it. They are easy enough to make anyway! However, if you really like to prolong the storage life, you can keep it frozen for up to 6 months. Thaw and add liquids as needed before serving. 

    Substitutions and Variations

    • Use different fruits or berries. As much as we love strawberry cheesecake, flavor variation is always a welcome idea! Try using blueberries, raspberries, cranberries, mangoes, peaches, kiwis, bananas, and any fruits that are in season.
    • Make it gluten-free. Use any gluten-free oat brand of your choice!
    • Vegan. To make this recipe plant-based, simply use dairy-free milk, yogurt, and cream cheese. You also have to swap the honey with maple syrup or agave nectar. 
    • Add nuts. Almonds or walnuts are a great option to add more texture and pops of saltiness to the mixture.
