How to make Strawberry Iced Tea
Prepare about 4 cups of peppermint tea and add muscovado sugar and lime juice. Set aside to cool.
Meanwhile, in a food processor or using an immersion blender, process 4 cups of the strawberries with on-and-off motions until smooth.
Add the puree to cooled or chilled peppermint tea, fill the jug with ice and serve with fresh strawberries, lime wedges, and mint leaves.
Tips and variations
- If you prefer, you can also strain the strawberry puree when adding to the tea, but I like when there are fresh strawberry seeds in the mix too.
- Add alcohol - add white or dark rum and make a cocktail out of this iced tea.
- Spritzer - it also tastes incredible when adding soda or sparkling water to the finished drink or individual serving glasses.
- This iced tea recipe can be made with other berries like raspberries, blueberries, blackberries, or berry mix too. Simply adjust to your liking and keep the same ingredient quantities.
- Sugar - for best results add the sugar while the peppermint tea is hot, but if using muscovado sugar it should dissolve in lukewarm water too.
DIFFERENT WAYS TO USE STRAWBERRY TOPS
Always save strawberry tops - don’t throw them away! Here's what you can make with them:
- Make strawberry-infused water.
- Don’t have a plan to use those tops right now? Place them in an airtight container and keep them in the fridge for up to a few days, or in the freezer for a few months, then pull them out when you’re ready to use them.
- Another great way to use them is to infuse your favorite spirit with them (i usually keep them in my rum for few days).
- Add the tops to your favorite smoothies to get a little pink hue and hint of strawberries.
